quick and healthy yummy recipes

I had a WIC (Women Infants and Children) appointment today. They had some great healthy, and fast recipes. I had to post them and share them.



Chicken Delicious

Ingredients:

4-6 whole chicken breasts,boned and halved

Lemon Juice

salt and pepper to taste

Celery salt to taste (optional)

Paprika

Garlic and herb seasoning to taste (optional)

1 can (10 3/4 ounces) cream of chicken soup

1 can (10 3/4 ounces) cream of celery soup

1/2 cup water

1 cup cheese,grated

Rice, cooked

Instructions:

Season rinsed chicken with Lemon juice,salt,pepper,celery salt, and paprika. Place in slow cooker. Mix chicken soup,celery soup, and water. Pour over chicken breasts. Sprinkle with cheese. Cover. Cook on low heat for 6-8 hours. Serve over hot rice. TIPS: Remove skin from chicken. This recipe fills slow cooker about half way, so recipe can be double.



No bake peanut butter drops(for children over 2)

Ingredients:

1 cup light corn syrup

1/4 cup sugar

1 cup peanut butter, creamy or crunchy

1 tsp vanilla

5-6 cups of corn flakes (can use cheerios,rice krispies)

Instructions:

Boil the corn syrup in a large saucepan. Add the peanut butter and stir until smooth. Remove the pan from the heat and stir in vanilla. Add cereal one or two cups at a time. Mix. Drop by heaping spoonfuls onto waxed paper. Stir in an airtight container.



Turkey-Vegetable Meatballs

Ingredients:

1 1/2 lbs. ground turkey

1/2 cup breadcrumbs*

1/2 cup parmasean cheese, grated

1/3 cup green onions, finely chopped

1/4 cup carrot, grated

1/4 cup zucchini, grated

1/4 cup fresh parsley, finely chopped

2 gloves garlic, chopped or crushed

*To make your own breadcrumbs, toast a slice of bread and chop or tear it apart with your hands. Stale bread is especially good for this.

Instuctions:

Preheat the oven to 400 degrees.

Combine all the ingredients in a bowl and mix well.

Shape mixture into 30 (1 1/2 inch) balls.

Place on a lightly oiled baking pan or cookie sheet.

Bake for 15-20 minutes.

I was wondering if anyone out here is like me. Do you ever feel out of control, like you need a life coach? I'm talking training for all areas of your life!
